Greek White Bean Salad

Greek White Bean Salad



  • 2 cans white beans, drained and rinsed
  • 2 cups grape tomatoes, halved
  • 1 English cucumber, diced
  • 3-4 green onions, chopped
  • 1 cup fresh parsley, chopped
  • 1 /2 -1 tablespoon fresh thyme, chopped
  • 1/2 -1 tablespoon, oregano, chopped
  • 1/2 - 1 tablespoon marjoram, chopped
  • zest of 1 lemon
  • 3 tablespoons Fustini's Citrus Oregano balsamic
  • 2-3 tablespoons Fustini's Medium SELECT olive oil
  • Feta cheese
  • salt and pepper


Step 1. 

In a large mixing bowl, combine beans, cucumbers, tomatoes, green onion, fresh herbs and lemon zest.  Drizzle Fustini's Citrus Oregano balsamic and olive oil.  Toss lightly to combine.  For best results, refrigerate for 30 minutes.  Garnish with feta cheese.

  1. Greek salad was so good!

    I loved this salad. This is not the type of salad I usually go for but I had seconds! It was a delicious and a perfect side to our chicken gyro meal. The beans gave it a great base and the veggies and dressing were tasty. Highly recommend. I said to my husband after we had it that I need to get that recipe!
