Green Gazpacho

  • 1/2 cup onion, minced
  • 1/2 cup cucumber, peeled, seeded and cut into small dice
  • pinch salt
  • 1/4 cup green pepper, very fine dice
  • 1 garlic clove, minced
  • 1 stalk celery, very fine dice
  • 1/2 jalapeno, seeded and minced
  • 1/4 cup vegetable stock
  • 1 tablespoon fresh cilantro, chopped
  • juice of 1/2 lime
  • fresh cracked black pepper
  • 1 teaspoon Fustini's 12 Year White Balsamic Vinegar
  • 1 tablespoon Fustini's Delicate SELECT olive oil


Step 1. 

Place onions and cucumber in a bowl and sprinkle with salt.  Let sit for 20 minutes then strain and rinse with cold water.  Dry then place into a bowl with the rest of the ingredients.
