Grilled Vegetables with Queso

Grilled Vegetables with Queso

If no grill pan is available, roast in the oven on a sheet pan at 400 degrees.


Step 1. 

Preheat the grill to medium-high.  Toss vegetables (minus onion) in a bowl with olive oil, salt pepper and garlic.  Toss onion (with the same ingredients) in a separate bowl so the rings of the onion don't fall apart.  

Step 2. 

Place vegetables in a single layer on a grill or grill pan and grill for 3-4 minutes or until grill marks appear on the vegetables.  When done, put vegetables on a platter and garnish with queso fresco and cilantro and a splash of Fustini’s Jalapeno Lime balsamic.
