Herb Roasted Turkey Breast

Herb Roasted Turkey Breast


  • 1 (6-8 lb) bone-in turkey breast
  • 4 tablespoons Fustini's Rosemary olive oil
  • 1 tablespoon Fustini's Rosemary Garlic Agrodolce
  • 2 tablespoons fresh flat-leaf parsley, roughly chopped
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 garlic clove, minced
  • 1 apple, sliced
  • 1 onion, quartered
  • 1/2 cup chicken stock


Step 1. 

Preheat the oven to 350F. In a small bowl, combine 1/2 of the olive oil, agrodolce and the herbs creating a paste.  Rinse and dry the turkey breast. Gently pull the skin up from the breast, creating a pocket.  Using your hands, press the paste in between the skin and the breast meat. 

Place turkey breast in a deep roasting pan. Place the apple and the onion in the small cavity under the bone. Add chicken stock to the pan and drizzle remaining olive oil over the top and season the turkey breast with salt and pepper.  Tent aluminum foil over the top of the breast and bake in the preheated oven for 1 1/2 hours. Remove foil and continue baking until a thermometer inserted in the breast reads 170F, about 1 ½ to 2 hours. Let sit for 10 minutes before slicing.
