Herbed Tomato Salad with Raw Vegetables

  • 1-pint cherry tomatoes, halved
  • 1 small fennel bulb, julienned
  • 2 pickling cucumbers, halved lengthwise and sliced ¼-inch thick
  • 4 radishes, julienned
  • 3 green onions, sliced ¼-inch thick
  • 1/2–3/4 cup raw fava beans, peeled
  • 1 cup raw green beans or asparagus tops, cut into 1-inch pieces
  • 1/2 cup chopped parsley
  • 6–8 leaves fresh basil, julienned
  • juice of 1/2 lemon
  • 2 teaspoons dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 cup any Fustini’s Medium SELECT olive oil
  • 1/2 cup Fustini’s Sicilian Lemon balsamic vinegar


Step 1. 

Toss first 9 ingredients (Tomato through basil) in a large bowl and set aside.

Step 2.  Dressing

Combine remaining ingredients in another bowl and whisk until emulsified.  Taste to adjust flavors.

Add dressing to salad and toss again.  Let stand at least 1 hour to meld flavors.
