Preheat grill to medium-high. If using wooden skewers, soak in water 20 minutes. Thread shrimp and lemon slices onto skewers. Drizzle with Pesto olive oil and season with salt and pepper. Grill skewers 4-5 minutes, turning occasionally until shrimp is done. Brush with pesto before serving. (pictured here with risotto).
