Preheat oven to 350 degrees. Drizzle asparagus with 1 tablespoon of SELECT olive oil, season with salt and pepper, place on a sheet pan and roast in a hot oven for 8 minutes. Place lemon juice, Fustini's Sicilian Lemon balsamic, dill and mustard in a jar with a tight-fitting lid and shake to combine. Add the remaining 2 tablespoons of SELECT olive oil and shake to emulsify. Once asparagus is done, toss with the lemon-dill vinaigrette and serve immediately.
