Mango Cucumber Salsa

  • 1 firm-ripe mango, peeled, pitted, and diced
  • 1/2 English cucumber, diced
  • 2 Tablespoons finely chopped scallion
  • 3 Tablespoons fresh cilantro leaves, chopped
  • 1/2 sweet red bell pepper, chopped
  • 1 Tablespoon fresh orange juice
  • 1 Tablespoon Spicy Korean Vinegar
  • 1 teaspoon Persian Lime olive oil


Pictured here over grilled chicken.


Step 1. 

Combine mango, English cucumber, scallions, fresh cilantro leaves and sweet red bell pepper.

Mix orange juice, vinegar and oil and toss in with salsa. Refrigerate 1 hour to let flavors meld.
