Add mashed potatoes to a medium bowl and add flour. Gently stir in onion, parsley and cheese. With your hands, mix and create a patty about 1-inch thick.
In a large skillet, heat olive oil on medium-high heat. Place potato patties gently into the pan and allow to brown on each side, about 3-4 minutes per side, undisturbed. Serve with a garnish of parsley.
