Mexican Street Corn Salad




Step 1. 

Preheat broiler on high. Toss corn with cilantro and onion oil in medium bowl, season with salt and pepper and place on a sheet tray. Place sheet tray directly under broiler until corn is just beginning to brown, remove and pour back into bowl.

Step 2. 

Add the rest of the ingredients and stir to combine. Garnish with a little extra cheese and cilantro.
