Mustard Potato Salad

Mustard Potato Salad



Step 1. 

Cut potatoes into a large dice and place in a pot filled with cold, salty water. Bring the water to a boil, and simmer for 10-15 minutes until potatoes are just tender. Drain and allow to cool.

Step 2. 

While the potatoes cool, combine the mustard, oil, vinegar, and shallot in a bowl and whisk to combine.

Step 3. 

Add the potatoes to the bowl, along with the celery and scallion and toss with the vinaigrette. Taste and season with salt and pepper if necessary
