Bring dates and water to a boil, reduce to simmer and let cook 20 minutes until a jam like consistency is achieved. Remove from the heat and stir in the Maple and Sicilian Lemon balsamics.
In a bowl, mix together the oats, flour, sugar, cinnamon, baking soda and Fleur de Sel. Add butter and work it in with your hands until mixture resembles wet sand.
Grease a 9x9 pan and press half the oat mixture in the bottom of the pan. Spread the date filling on top and cover with the remaining oat mixture. Place in a preheated 350 degree oven until golden brown. Remove and let cool before slicing.
