Pine Nut Pasta Salad

Ingredients

  • 1 cup pine nuts
  • 2 tablespoons Fustni's Butter olive oil
  • 1/2 pound small pasta, such as orecchiette
  • 1 cup sliced olives
  • 1/2 cup fresh parsley, minced
  • 1/2 cup green onions, minced
  • 1/3 cup green pepper, diced
  • 1/3 cup red pepper, diced
  • 1/4 cup Fustini's Meyer Lemon olive oil
  • 1/4 cup lemon juice
  • pepper to taste
  • Parmesan cheese, grated to taste


Directions

Step 1. 

In a large skillet, toast pine nuts in Fustini's Butter olive oil until golden.  Transfer to a paper towel to cool.  Cook pasta according to package directions, drain and rinse in cold water.  Gently mix the pasta with pine nuts and remaining ingredients to taste.  Cover and chill until ready to serve.
