These meatballs can also be a great appetizer. Form the meatballs into tiny size (1/2 - 1") bake and serve on a skewer/toothpick with a marinara sauce for dipping. Adapted from newyorktimes.com
Heat oven to 425 degrees. In a large bowl, combine by hand the cheeses, salt, pepper, egg, balsamic, bread crumbs and pork. Shape the mixture into 12 equally sized balls (about 2"). Grease a rimmed baking sheet with the Tuscan Herb olive oil and arrange meatballs on the prepared pan. Bake until golden and cooked through for 15-18 minutes (internal temperature 165 degrees). Serve warm with pasta and sauce.
