Substitute your favorite herb-infused olive oil.
Grate potatoes and onions using the large holes on a box grater or a food processor, place grated potatoes in a tea towel, and wring out all moisture. Add potatoes to a bowl with flour, matzo meal salt, and eggs.
Line the bottom of an air fryer with parchment paper. Drizzle with olive oil. Scoop about a 2-ounce ball of potato mixture and flatten with your hands. Place on the parchment in the air fryer and drizzle with more olive oil.
Air fry at 400 degrees F. until the latkes are light golden brown & just crisp on the edges, about 8-10 minutes. Flip latkes over and drizzle with a little more olive oil. Continue to cook for 6-8 more minutes until crispy.
Sprinkle with chives and serve with sour cream.
