Toss sweet potatoes in 2 tablespoons olive oil and arrange on a sheet tray in a single layer. Lightly salt and pepper. Roast in the oven at 375 degrees for about 20 minutes or until sweet potatoes are soft and slightly golden.
While sweet potatoes are roasting, heat 2 tablespoons of olive oil in a large skillet. Add onions and saute until soft (you may have to add a little water during cooking to avoid getting the onions too brown). Add the balsamic and stir until all onions are coated evenly. Remove from heat. When potatoes are cooked, add them to the skillet with the onions. Stir to mix onions and potatoes together.
