Rum and Pineapple Pork Skewers

Rum and Pineapple Pork Skewers


  • 1 cup boiling water
  • salt to taste
  • 1 tablespoon brown sugar
  • 3 tablespoons Fustini's Habanero Agave agrodolce
  • 4 cloves of garlic
  • 1 cup rum
  • 2 1/2 pounds pork, cubed
  • 1 pineapple, cut into 1" chunks
  • 8-10 skewers
Jerk Sauce
  • 2 tablespoons whole allspice berries
  • 2 tablespoons dried thyme
  • 2 tablespoons dried rosemary
  • 1 tablespoon brown sugar
  • 1 tablespoon green onion
  • 2 tablespoons water


Step 1. 

In a medium saucepan, combine water, salt, brown sugar, agrodolce, garlic cloves and rum.  Bring to a boil for 1 minute and then allow it to cool.  Once cooled, divide, pouring 1/2 into a sealed bag with pork to marinate.  Let meat marinate 4 hours.  If using wooden skewers, soak in water for 20 minutes.  Preheat grill to medium-high.  Thread marinated pork onto skewers alternating with pineapple chunks, discard marinade.  Grill for 5 minutes, basting skewers with the remainder of the marinade sauce.  When the internal temperature reaches 145 degrees or desired doneness, remove from grill and serve with Jerk Sauce.

Step 2. 

Combine all ingredients.  Add additional water as needed.
