  • 1 tablespoon Fustini’s Medium SELECT olive oil
  • 4 6-ounce center-cut salmon fillets, skinned
  • salt and freshly ground black pepper
  • 2 garlic cloves, pressed
  • ¼ teaspoon  coarse kosher salt
  • ½ cup mayonnaise
  • chopped thyme and oregano
  • 2 tablespoons Fustini's Meyer Lemon olive oil
  • 1 tablespoon fresh lemon juice
  • freshly ground black pepper
  • goat cheese 
  • fresh mini brioche buns/rolls


To add some crunch, toast buns before assembly.


Step 1. 

Heat a grill-safe skillet over medium-high grill heat. Add oil.  Cook salmon for 3-4 minutes on each side, until cooked and easily flaked with a fork. Transfer salmon to a plate, cover with foil and let rest for 5 minutes.  

Step 2. 

Mash garlic and ¼ tsp. salt in a small bowl until a paste forms. Whisk in mayonnaise, oil, herbs, and lemon juice. Season with salt and pepper.  Use mixture for salmon topping.  Assemble salmon on a bun top with sauce and goat cheese.

    Nice item for lunch or dinner. It could easily be presented to a group of guests for a pot luck dinner. The Meyer Lemon Olive Oil gives the salmon a delicious taste.
