Step 1. 

Slice the cabbage in half and, with the cut-side down.  Remove the core and slice it as thinly as possible into shreds.  Heat a cast-iron or a large saute pan over medium-high heat with the Leek olive oil. Add the cabbage, salt, and pepper and saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. (optional - turn off the heat and pour in vinegar.)  Stir and serve warm
