Heat the garlic oil in a pan, add the onion and tomatoes, and sauté until onions are translucent and tender, and tomatoes have broken down. Then, add the greens and continue to cook until tender, about 5 minutes.
Add sherry vinegar and allow to cook down with the greens. When the greens are cooked, plate them and top with the crushed peanuts.
