Directions
Step 1.
Combine the shallot, garlic, red pepper, ginger, soy sauce, honey, balsamic and sesame oil in a large dish. Add the salmon fillets and turn to coat. Set aside for 30 minutes to marinate. Meanwhile, preheat the oven to 400 degrees. Line a baking tray with parchment paper. Place the broccoli in a bowl, toss with olive oil and season with salt and pepper. Place on the prepared tray and roast for 15 minutes.
Step 2.
Push the broccoli to the sides of the tray. Place the salmon fillets in the center of the tray and drizzle with the marinade. Roast for a further 12-15 minutes or until the salmon is cooked through. Sprinkle with the extra diced red pepper. Serve with steamed rice.
