Shrimp and Crab Salad

Ingredients

  • 8 oz cooked shrimp (if using large shrimp, cut into pieces)
  • 8 oz cooked crabmeat (blue crab, snow crab or king crab)
  • Fustini’s Grapefruit Vinaigrette (recipe below)
  • Sections from 2 ruby red grapefruits, supremed
  • 1/2 cup Napa cabbage, thinly sliced
  • 1 Bibb lettuce head
  • 2 Tbsp sweet red pepper, finely diced
Grapefruit Vinaigrette

Directions

Step 1. 

Place shrimp and crabmeat in a bowl, then add several tablespoons of Fustini’s Grapefruit Vinaigrette and fold together. Add grapefruit sections and Napa cabbage and fold together again. Cut the stem from the Bibb lettuce and spread on a serving plate. Spoon salad over the lettuce and garnish with red pepper.


Step 2.  Grapefruit Vinaigrette

Combine all ingredients until emulsified.  Chill until ready to use.
