Slow Cooker Carne Asada

Slow Cooker Carne Asada


  • 1 3 1/2 - 4 lb chuck roast
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons Fustini's Chipotle olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cayenne pepper
  • 1/4 cup Farmstyle Sriracha
  • 1 yellow onion, diced
  • 3 tomatillos, puréed


Great to make a large batch and freeze in smaller portions for tacos etc. If your slow cooker can 'sear', you can do all this in the slow cooker!


Step 1. 

In a large skillet, heat olive oil over medium-high heat.  Season each side of the meat with salt and pepper and place in the prepared skillet.  Sear both sides for 4-5 minutes.  Remove from pan.

Step 2. 

Add seared meat to the slow cooker. Top with spices, sauce, onion, and tomatillos.  Add additional water to the slow cooker so that the meat is 1/2 way underwater.

Step 3. 

Cover and cook on high for 4 hours.  Reduce heat to low for an additional 2 hours until the meat falls apart.

Step 4. 

Once done, remove from liquid and allow to cool enough to handle.  Shred meat and reserve as desired.
