For additional flavor, substitute your favorite Fustini's herb-infused olive oil. adapted from tasteofhome.com
Place potatoes and apples in a 6-qt. slow cooker. Add apple juice and beer. Cook, covered, on low 5-6 hours or until potatoes are tender. Drain the mixture and return to the slow cooker. Add brown sugar, sour cream and olive oil. Mash potato mixture to reach desired consistency. If desired, top with minced chives.
