A great recipe to use up leftover grilled steak! Substitute Fustini's Spicy Korean balsamic for a little more kick. Adapted from delish.com
In a large bowl, whisk together soy sauce, sesame oil, vinegar, Sriracha and garlic. Slowly whisk in SELECT olive oil until combined.
Place steak in a shallow pan or ziploc bag and pour 1/3 of soy mixture over steak. Let sit for 10 minutes.
Bring a pot of water to a boil. Cook soba noodles according to package directions, drain and rinse with cold water. Place in a large bowl and toss with carrots, cucumber and 1/2 of green onions. Pour remaining soy mixture over noodles and toss gently to combine.
Heat a grill pan or grill to high. Remove steak from marinade and discard marinade. Season with salt, pepper and lightly oil. Grill steak for 5 minutes per side for medium. Let rest for 5 minutes before slicing diagonally. Serve steak over soba noodle salad. Drizzle with remaining tablespoon of sesame oil and garnish with remaining green onion and sesame seeds.
