Preheat the oven to 450°F. Cut the sweet potatoes into ¼-inch slices. Place the slices in a large bowl, sprinkle with olive oil, cumin, Scorpio salt, and stir to thoroughly coat both sides of all slices. Place in a single layer on a baking sheet lined with parchment paper. Bake 10 minutes on one side, then remove from the oven, flip all rounds, and bake another 10 minutes until soft.
In a small bowl, combine sriracha and cheese. Remove potatoes from the oven and place a dollop of cheese mixture on each round. Return to the oven for 2-4 minutes until the cheese is melted. Garnish with a dab of cream cheese and green onion.
