Spinach Strawberry Salad

Spinach Strawberry Salad

  • 1 9-ounce bag fresh spinach leaves, approximately 4 cups
  • 8 ounces strawberries, sliced thick
  • 1/4 cup small red onion, sliced
  • 1/2 cucumber, sliced
  • 1/4 cup sliced almonds, (can be toasted lightly in oven)
  • 2 tablespoons of fresh lemon juice
Lemon Vinaigrette


Step 1. 

Place spinach in a large bowl, mix in strawberries, onions, and cucumbers. Pour Lemon Vinaigrette over spinach mix. Toss well then sprinkle with toasted almonds.

Step 2.  Lemon Vinaigrette

In small bowl mix poppy seeds, Fustini’s Meyer Lemon Olive Oil, Fustini’s Sicilian Balsamic Vinegar, sugar, and lemon zest, then whisk until well blended.
