Spring Vegetable Salad with Lime Poppy Seed Vinaigrette

Spring Vegetable Salad with Lime Poppy Seed Vinaigrette

  • 1 pound asparagus, peeled and cut into bite-size pieces and blanched
  • 1 large carrot, peeled and cut into small slices and blanched
  • 3-4 radish, sliced thin
  • 2-3 green onions, sliced thin
  • 3-4 artichoke hearts, quartered
  • Spring mix
  • Grape tomatoes
  • Supreme of lime
Lime Poppy Seed Vinaigrette


Step 1. 

Place asparagus, carrots, radish, green onions and artichoke hearts in a bowl and pour vinaigrette over top.  Stir to coat and serve over spring mix with grape tomato and supreme of lime.

Step 2.  Lime Poppy Seed Vinaigrette

Combine lime juice vinegar poppy-seeds, salt and pepper and add EVOO.  Shake to emulsify and use immediately.

  1. Bright citrus flavor

    Nice, sweet and zippy flavor. You could use all sorts of blanched or roasted vegetables on this salad! We added some farro to make it a meal.
