A delicious alternative to dinners without pasta or rice. Cooking time should be flexible depending on the thickness of the steak. In my case I dialed back the heat of skillet to medium to minimize the smoke of the olive oil, added about 1 minute to each side and extended the resting time by two minutes. The only side was fresh baguette with olive oil and 18 year balsamic. This dish was a hit.
