This is an excellent way to use extra grilled meat! Just slice and add it to the onions and peppers at the very end to warm up.
Season steak with salt and pepper. Brush with olive oil and either sear in a cast-iron skillet or grill until desired doneness is achieved. Let rest 10 minutes before slicing.
Drizzle more olive oil on the inside of the buns and either place on the grill with the steak or place oil side down on a grill pan and heat until lightly toasted.
In a small sauté pan, heat 1/2 teaspoon of olive oil and add the onions and peppers. Sauté until soft with a little bit of a char on them.
To assemble, place about 1 + tablespoon of Chipotle aioli on both sides of the toasted bun. Add steak and vegetables to the bottom half. Add cheese and arugula. Place the bun top on the sandwich.
Combine ingredients in a small bowl and refrigerate until ready to use.
