Summer Salad with Creamy Mustard Vinaigrette

Ingredients

  • sliced radish
  • shredded radicchio
  • diced tomato
  • red endive
  • baby zucchini, sliced
  • sugar snap peas
  • baby carrots, sliced
  • cucumber, sliced
  • asparagus, peeled and sliced thin
  • arugula
  • salt and pepper
Creamy Mustard Vinaigrette

Directions

Step 1. 

Arrange vegetables and lettuce on a plate.  Drizzle dressing over top and season with salt and freshly ground black pepper.


Step 2.  Creamy Mustard Vinaigrette

Whisk together the egg yolk, mustard, vinegar, garlic and shallot.  While whisking, slowly add enough olive oil to the desired thickness.  Season with salt and pepper and use immediately.
