In a medium bowl, toss sweet potato, onion, bell pepper, olive oil, paprika, salt and pepper to combine.
Working in batches, in an air-fryer basket, arrange the potato mixture in a single layer (do not overcrowd). Cook at 400°, tossing halfway through until potatoes are browned in spots and cooked through, about 14 minutes.
Transfer the potato mixture to a platter. Top with scallions and cilantro.
