Sweet Potato Orange Bread

  • 1/4 cup butter
  • 1/4 cup Fustini's Blood Orange olive oil
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup cooked sweet potatoes, mashed
  • 1 cup flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup pecans
  • 1 tablespoon orange zest


Step 1. 

Preheat oven to 350 degrees.  Blend softened butter and olive oil.  Add sugar, mixing well.  Add eggs and beat thoroughly.  Add sweet potato and mix well.  In a separate bowl, sift together flour, baking soda and salt.  Fold flour mixture, pecans and orange zest into wet ingredients.  Pour into a pre-greased loaf pan.  Bake for up to 1 hour or until the knife inserted comes out clean.
