Soak skewers in water for 60 minutes. Place swordfish in a bowl and drizzle some Fustini's Herbs de Provence olive oil over the top and marinate for 30 minutes. Skewer the swordfish pieces alternating with a bacon slice. Drizzle each with more Fustini's Herbs de Provence olive oil and set aside.
Prepare a hot grill. Season skewers with salt and pepper and grill on each side for a few minutes, finishing over indirect heat if necessary. Remove from grill, sprinkle with Fustini's Sicilian Lemon Balsamic Vinegar, garnish with mixed fresh herbs and serve.
