Cook sausage in a medium-size pot over medium-low heat until fully browned and all liquid is gone, 15 to 20 minutes. Add onion, red pepper and Fustini’s Garlic Olive Oil and cook for another few minutes stirring frequently. Add the tomatoes, paste, wine, balsamic and spice blend and bring to a simmer. Turn the heat to low and simmer sauce until slightly thickened, about 45 minutes.
Heat 4 quarts water in a large pot and add a hand full of salt. When rolling, add the tortelloni and stir well. Turn the heat to medium and cook pasta, stirring three more times, for 8 minutes. Drain well and add a little of the sauce to the drained pasta and stir to coat. Serve with a little more sauce over the top and a sprinkle of Parmesan cheese.
