Tropic Granita

Step 1. 

In a medium pot, bring sugar and water to a boil.  Cook until sugar dissolves.  Place the ice in a medium bowl, and pour hot sugar water over the top.  Cover and refrigerate until cold.  Once cold, add in zest, juices, balsamics and place in the freezer until frozen.  Once frozen, scrape the surface with the tines of a fork to flake.  Pour into two glasses, add favorite liquor (if using) and garnish with remaining zest.
