Watermelon Pico de Gallo

Step 1. 

Place watermelon, jicama, honeydew, cantaloupe, red onion, jalapeno, and cilantro in a large bowl and stir to combine. Whisk together lime juice, maple syrup and vinegar. While whisking, slowly add oil to emulsify. Season with salt and pepper and pour over fruit. Stir to coat and serve.
