For a crunch zoodle, do not sauté, just combine and add olive oil.
Use a vegetable spiralizer or mandolin to make zucchini noodles. Lightly sauté the zucchini and minced garlic in olive oil. In a different pan, sauté vegetables of your choice including tomatoes (if you want a sauce).
Combine zucchini noodles and veggies or use as a sauce. Squeeze fresh lemon and grate Parmesan cheese in top. Salt and pepper to taste
