Zucchini Pappardelle Pasta




The easiest way to make ribbons of zucchini is to use a vegetable peeler. Great as a side dish. Add grilled chicken or sautéd fish to make it a more hearty meal. Adapted from ''Season to Taste"


Step 1. 

Warm 1 tablespoon of olive oil over medium heat in a large skillet.  Add zucchini and sauté, turning often with tongs, for about 2 minutes.

Step 2. 

Add garlic and cook until zucchini is softened 2-3 minutes longer.  Mix in parsley, basil, balsamic, Parmesan spices and the remaining 1 tablespoon of olive oil.  Tossing to coat the zucchini.

Step 3. 

Season to taste with salt and pepper. Serve topped with parmesan cheese.
