In a large bowl, combine cole slaw, green onion and red pepper.
In a medium bowl, combine tahini, mayo, oil and balsamic. Whisk to combine. You may need to add additional balsamic to loosen the mixture depending on the density of the tahini. Add mixture to cole slaw and combine well.
Take 1/4 cup of the mixture and spread it across the tortilla. Roll the tortilla up and place it on a plate. When ready to serve, slice rolls into thirds and serve with dipping sauce.
Whisk together ingredients and reserve until ready to serve.
