Peach, Tomato, Corn Salad
Directions
- Place pork chops in a shallow glass baking dish. In a small bowl, whisk together mustard, wine vinegar, honey and olive oil. Pour mixture over pork, turning to coat and let sit 10 minutes.
- Preheat the grill to medium high. Remove the pork chops from the marinade and season with salt and pepper. Grill 4-5 minutes per side until internal temperature reaches 145 degrees F. Remove from heat and allow to rest for 5 minutes. Serve pork chops with peach-tomato salad.
- Place the tomatoes, peaches, corn and basil in a large bowl. In a small bowl, whisk together the garlic, vinegar, olive oil, salt and pepper. Drizzle over tomatoes and toss to coat.
