Preheat the oven to 375 degrees. Place fish fillets on a baking sheet and drizzle with Fustini&rsquo,s olive oil. Season with salt, pepper. cumin and coriander. Bake fish for 10 minutes per inch of thickness and remove it from the oven. To serve, place fish in corn or flour tortilla, garnish with any of the Taco Truck Garnishes and enjoy.
