Lemon Blueberry Yogurt Loaf

Directions

1. Preheat your oven to 350°F (175°C).
2. Grease a 9x5-inch loaf pan and line the bottom with parchment paper.

3. Mix the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

4. Combine the Wet Ingredients: In a large bowl, whisk together the olive oil, yogurt, sugar, eggs, lemon zest, and vanilla extract until smooth.

5. Gradually whisk in the dry ingredients until just combined.
6. Gently fold the flour-coated blueberries into the batter.
7. Pour the batter into the prepared loaf pan and smooth the top.
8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Lemon Glaze

1. In a small bowl, whisk together the fresh lemon juice, powdered sugar, and lemon zest until smooth.
2. Once the loaf is completely cooled, drizzle the lemon glaze over the top.
