Place the shredded cabbage and the matchstick carrots in a large bowl. Combine the balsamic with the Sesame oil to emulsify, then pour over the cabbage and carrot mixture. Mix well.
Sauté, the green onion in olive oil, add the Ramen Noodles and sesame seeds, stirring just until they brown. Combine the noodles with the cabbage mixture, then serve.
