Watermelon Cucumber salad with Feta

Ingredients
- ½ seedless watermelon cut into 1” cubes
- 1 english cucumber cut into quarters and sliced ¾ in thick
- 10 mint leaves, chopped
- 20 basil leaves, chopped
- 4 oz. crumbled feta cheese (use more or less to your liking)
- 2 tablespoons Watermelon Mint balsamic vinegar
- 2 tablespoons Persian Lime olive oil
- 1 tablespoon honey
- Pinch of salt to taste
Directions
- In a medium bowl, combine watermelon, cucumber and fresh herbs.
- In a small mixing bowl, whisk together vinegar, oil, honey, and salt until emulsified.
- Before serving, drizzle dressing over salad and toss to coat. Top with feta cheese and serve.
