Watermelon Cucumber salad with Feta

Ingredients

  • ½ seedless watermelon cut into 1” cubes
  • 1 english cucumber cut into quarters and sliced ¾ in thick
  • 10 mint leaves, chopped
  • 20 basil leaves, chopped
  • 4 oz. crumbled feta cheese (use more or less to your liking)
  • 2 tablespoons Watermelon Mint balsamic vinegar
  • 2 tablespoons Persian Lime olive oil
  • 1 tablespoon honey
  • Pinch of salt to taste

Directions

  1. In a medium bowl, combine watermelon, cucumber and fresh herbs.
  2. In a small mixing bowl, whisk together vinegar, oil, honey, and salt until emulsified.
  3. Before serving, drizzle dressing over salad and toss to coat. Top with feta cheese and serve.
