Ingredients
- 1/2 cup fresh watermelon
- 1 can of Chickpeas/Garbanzo beans washed
- 1 1/2 tablespoon Watermelon Mint Balsamic
- 1 tablespoon Basil Crush Olive Oil
- 1 teaspoon garlic
- 2 tablespoons red onion
- 4 Mint leaves
- 4 parsley sprigs
- Salt and pepper to taste
- Pistachios
Directions
- Add all hummus ingredients to a blender and blend until smooth. Serve in a bowl with crushed pistachios sprinkled on top. Dip veggies, naan, crackers, or spread onto your favorite sandwich.
- For another amazing use: Take Pita bread and spread hummus generously, add Yogurt Spread and Lime Garlic Marinated Chicken ( both from Fustini’s “By The Bay Chicken Sandwich” Recipe), sliced red onion, diced tomato, and local arugula for a fresh & sweet take on a Mediterranean Chicken Gyro.
