Apple, Celery and Blue Cheese Salad

Ingredients
- 1 Honeycrisp apple, finely julienne
- 1/2 cup celery - sliced on the bias
- 1/2 cup blue cheese - crumbled
- spring mix
- fresh parsley
- 3 tablespoons Fustini’s 18 Year Balsamic vinegar
- pinch of salt
- fresh ground black pepper
- 1-2 tablespoons Fustini’s Delicate SELECT olive oil

Directions
- Combine apple celery and cheese. Toss spring mix with half of the vinaigrette and divide among serving plates. Toss the apples with the rest of the vinaigrette and place a dollop on top of the spring mix. Garnish with parsley and serve.
- Whisk together vinegar, salt and pepper. Whisk in enough olive oil to taste.
