Burrata Bruschetta Toasts

Ingredients
- 2 cups cherry or grape tomatoes, halved or quartered
- 1/4 cup chopped red onion
- 1 garlic clove, finely grated
- 2 tablespoons Fustini's Basil Crush olive oil, plus more for toasting
- Kosher salt and freshly ground black pepper
- chopped fresh basil
- 8 slices of crusty bread
- 1 whole garlic clove, peeled
- 2 large balls of burrata

- Combine tomatoes, red onion, grated garlic 2 tablespoons of olive oil, salt, pepper and some chopped fresh basil in a bowl. Taste and adjust seasoning as needed.
- Preheat the oven to 400, or a grill pan to medium-high. Drizzle bread slices with olive oil and sprinkle with salt and pepper. Bake 10-12 minutes, or grill 8 minutes (turning half way through) until the edges of the toast are golden and crisp.
- Remove the bread from the oven/stove and carefully rub the garlic clove all over the surface while they are still hot. Place on a plat and top with tomato mixture. Taking the burrata ball, pull it apart and place pieces on each toast. Garnish with more basil before serving.
