Whip up a delicious soup with what you've got in the pantry as well as fresh, gourmet ingredients from Fustini's Oils & Vinegars. This Country Corn Chowder recipe incorporates a fun Butter olive oil that gives that comfort food taste, but maintains health benefits.

Ingredients

2 tablespoons Fustini's Butter olive oil
- ½ cup minced onions
- 2 ½ cups diced potato
- ½ teaspoon salt
- 1/3 cup bacon, cooked, chopped
- 1 - 15 ounce can of creamed corn
- 1 - 15 ounce can evaporated milk
- shredded cheddar cheese for garnish.
Directions
In a medium saucepan, heat olive oil and sauté onions until they are soft. Remove them from the pan.
Add diced potatoes and cover with an inch of water and boil for 10 minutes.
Add bacon, corn, cooked onions and milk and simmer for 15 minutes until heated through. Garnish with shredded cheese.
