Ingredients

1 12-ounce can butter beans

1 12-ounce can garbanzo beans

½ pint fresh cherry tomatoes

1 medium cucumber (seedless is optional but crunchy is a must)

1 bunch green kale (curly or Tuscan will work!)

1 8-ounce block feta cheese
Dressing
-
¼ cup Peach Balsamic Vinegar
-
¼ cup Frantoio SELECT Extra Virgin Olive Oil
-
1 heaping Tablespoons Dijon mustard
Directions
Rinse and drain your garbanzo and butter beans.
Cut cherry tomatoes in half and cucumber into bite size pieces.
Roughly chop kale, discarding middle rib, and massage with a drizzle of olive oil for a minute or so.
Mix together your Frantoio, Peach Balsamic, and dijon mustard for the dressing. We recommend shaking vigorously in a sealed jar. Don’t forget to taste-test and adjust the way you like!
Assemble the salad by combining beans, kale, tomatoes, and dressing. Crumble the entire block of feta into the salad and mix gently. Finish by topping with your crunchy cucumbers.

Recipe Note
This is a flexible recipe that allows for lots of additions and substitutions. We add sweet bell pepper to the mix when available, and top with creamy diced avocado. You can also feel free to swap out bean varieties to suit your taste. For us, we love the difference in texture between garbanzo beans and butter beans!
